Is this something that becomes known to the expedition?

Saruko have some personal rations she packed that she'll happily donate (9 days worth for 1 person).

EDIT: Would also choosing to fast (by also using the Fasting function for Meditation, by rolling Meditation/Stamina vs TN 15+5 per day of fasting) also help the food stocks? As Saruko isn't a warrior, she'd want to prioritize the warriors and shugenja to get their fill.

Sure. Successful rolls will just replace the missing supplies, I won't dig into the specifics.
